Sumac is a great spice adding tartness and a certain zing to your dish as well as giving it a colored flair to anything it touches. It is quite the flavor booster without it being overpowering. It can be used in place of lemon when not in search of the acidic properties of citrus as it is quite lemony and contains notes of berry. Sumac is most commonly used in Middle Eastern cooking although I tend to toss on just about anything......a salad, a roasted chicken, tofu scramble or even on buttery toast or a big bowl of fresh watermelon.
